材料INGREDIENTS
700克鱼 700g fish (Any fish)
A
10克 干虫草花(洗净,浸5分钟,沥干)10g dried Cordyceps flower (wash, soak for 5 minutes, drain)
10克 云耳 (浸软去硬蔕, 用滚水汆过,沥干)10g fungus (soak and remove hard stalks, boil in boiling water, and drain)
1大匙 枸杞子 (洗净) 1tbsp Goji Berry
10克 姜丝 10g shredded ginger
10克 白云耳(浸软)10g white fungus (soaked)

B
1小匙 麻油 1tsp sesame oil
2大匙 油 2 tbsp oil
½小匙 鸡精粉 ½ tsp chicken powder
4大匙 上汤 4 tbsp stock
½ 小匙 粟粉 ½ tsp corn starch
1小匙 绍兴酒 1 tsp siu heng wine
1大匙 生抽 1tbsp soy sauce

C
180毫升 上汤 180ml stock
2大匙 生抽 2 tbsp soy sauce
½ 大匙 糖 ½ tbsp sugar
½ 小匙 鸡精粉 ½ tsp chicken powder
少许 嗮油 a little bit of thick soy sauce
1大匙 鱼露 1tbsp fish sauce

D
1棵葱 1 scallion
1条 辣椒(切丝)1 shredded chilli

E
4大匙 油 4tbsp oil
2瓣蒜米(拍扁)2 cloves garlic

做法 METHOD:
1. 鱼用沸水汆1分钟, 取出, 抹干水份,放在盘中。Boil the fish in boiling water for 1 minute, take it out and wipe it dry, place it on a plate. (This is optional)
2. A料加B 料拌均, 蒸10 分钟, 倒在鱼上在蒸8分钟. Ingredients A & B mix well and steam for 10 minutes, pour on top of fish and steam for 8 minutes.
3. C 料煮滚, 淋在蒸好的鱼上面。 Ingredient C bring to boil and pour on top of steamed fish.
4. 将油加蒜米炒至金黄色, 去掉蒜米, 趁热淋在鱼上, 撒下D料。Stir-fry the oil and garlic until golden brown, remove the garlic, pour it on the fish while it is hot, and sprinkle with ingredient D.
